This weekend I got together with some friends and we had a baking day.  It was quite the day.  We started baking around 1 o’clock and baked through till six or seven.  Most of the things that were made that day were not vegan (I help with those tasks by making sure that the dishes were washed for them), but we did manage two very yummy vegan treats.

Our first was a vegan gingerbread cupcake with lemon buttercream from Vegan Cupcakes Take Over the World.  This is my go to cake and cupcake recipe book.  I have yet to make something from this book that didn’t turn out amazing.  When prepping for this recipe I thought that lemon buttercream was just going to be weird on a gingerbread cupcake, but it actually works quite well.  The flavors really meld.

We also made an easy treat of chocolate covered peanut butter pretzels.  These were pure heaven.  We used the plain pretzel thins to make small peanut butter sandwiches and coated them with melted chocolate.  They were so easy to make yet may have been the star treat of the day.  I was so busy eating them that I forgot to take a picture of them…lol
